Apple Hill Cake

Combine:
2 cups sugar
½ cup oil
2 eggs
4 cups diced apples

Add to apple mixture after sifting together:
2 cups flour
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda

Combine together. Pour into a greased 9X13 cake pan and bake for one hour in a preheated 350-degree oven. Serve hot, warm or cold…plain, frosted or with whipped cream or vanilla ice cream.
